Commercial dishwashers for hotels: capacity, installation and an RFQ checklist
Start with peak dish returns and site constraints. Compare machine formats, prepare an RFQ and agree a trial test. No fabricated brands, prices or savings claims.
A dishwasher is part of a handling line, not an isolated capacity number. Measure how quickly clean tableware must return to service, then check the space and utilities available. Define peak demand Record short peak intervals, dish mix, sizes, return patterns, pre-cleaning and spare tableware. Do not average a breakfast peak across the whole day. Ask suppliers to test representative items and loading arrangements. Compare formats and interfaces Format Discussion point Undercounter Small-batch stations and handling ergonomics Door or hood type Rack loading, pre-rinse and table layout Conveyor formats Continuous returns, utilities and maintenance access These are discussion categories, not automatic seat-count rules. Illustrative capacity calculation Assume 900 items in an hour and 15 usable items per rack: demand is 60 racks/hour. If a hypothetical 20% allowance is reserved for interruptions, continuous rated capacity would need comparison against 60 ÷ 0.8 = 75 racks/hour. These assumptions are not a specification. Validate the complete line under representative load. Request a written quotation scope Capacity, loading and test conditions. Water and energy use, including idle consumption. Water quality, drainage, power and ventilation requirements. Included tables, installation work and consumables. Warranty exclusions, service coverage, parts and training. Acceptance tests and remedies for failed items. ENERGY STAR commercial dishwasher guidance is a useful efficiency reference. US certification and savings estimates are not local project requirements or guaranteed savings for your hotel. Acceptance and safety Have qualified personnel confirm installation and applicable hygiene requirements. Visual cleanliness alone is not sanitation verification. Follow the equipment instructions and appropriate professional advice; this article does not prescribe universal temperatures, chemical concentrations or wiring steps. Common questions A larger machine is not automatically a better fit. Compare full installed and operating costs, not only purchase price. Require site-specific evidence before accepting savings claims. This is an editorial buying guide, not a product listing.
